How to Spatchcock Poultry

Flatten the bird for a faster, more even cook with crispier skin.

Updated June 2026

The technique

Flip the bird breast-down, cut along both sides of the backbone with kitchen shears, remove it, flip over and press flat until you hear the breastbone crack.

Why do it

A flattened bird cooks faster and more evenly, so the breast doesn't overcook before the thighs finish — and more skin is exposed to crisp up.
