Ingredients
- 2 lb ground beef (80/20)
- 1 cup breadcrumbs
- 2 eggs
- 1/2 onion, diced
- 2 tbsp BBQ rub
- 1/2 cup BBQ sauce (glaze)
Steps
- Mix everything except the glaze; form a loaf on a tray or in a pan.
- Smoke at 250F for about 2.5-3 hours.
- Brush with BBQ sauce in the last 30 minutes.
- Pull at 160F internal and rest 10 minutes.
Use a pan with holes or a rack
Letting smoke reach all sides gives better bark and flavor than a solid loaf pan.
