  1. Trim the fat cap to ¼ inch, leaving enough to protect the meat and render. Score the fat in a crosshatch pattern with a sharp knife.
  2. Mix salt, pepper, garlic powder, paprika, and cayenne in a bowl. Rub the entire picanha with olive oil, then coat generously with the spice blend. Let it sit uncovered at room temperature for 30 minutes.
  3. Set your smoker to 225°F using oak or hickory wood. Picanha is lean, so choose a mild smoke that won't overpower the beef.
  4. Place the picanha fat-side up on the grate, directly over the smoke. Insert a meat thermometer into the thickest part of the eye, away from fat.
  5. Smoke for 60–90 minutes, checking temp every 20 minutes. The fat cap will render and baste the meat as it cooks.
  6. Pull the picanha when the internal temp reaches 130°F for medium-rare. This is critical—picanha dries out quickly if overcooked.
  7. Rest the steak for 10 minutes tented loosely with foil. This allows carryover cooking to bring it to about 135°F and lets juices redistribute.
  8. Slice against the grain into ½-inch pieces. Serve hot with sea salt on the side.
