- 1/4 cup brown sugar
- 3 tbsp butter
Steps
- Cube pork belly into 1.5-inch pieces; season with rub.
- Smoke at 250F for about 3 hours until 190F.
- Toss in a foil pan with sauce, brown sugar, and butter.
- Return 1-2 hours until tender and glazed (~200-205F).

Pork belly needs to cook past 190F so the fat renders — undercooked belly is chewy, not tender.
